Watermelon Salad with Roasted Pecans and Feta

The first time I had this salad was 5 years ago in the Bahamas. The view was spectacular and so was the salad. Sweet simple summertime goodness! There are several different ways to prepare this salad. Add lettuce, nuts, cheese, mint, cucumbers, tomatoes… the choice is all yours! 

I used a Spring mix of lettuce, roasted pecans (love), feta, cubed watermelon and balsamic glaze. Saved a few slices to eat separately, of course : )

Ingredients: 1/2 watermelon, cubed – 1/2 cup roasted pecans – 2 tablespoons feta cheese – 1 container fresh spring mix – 2 teaspoons balsamic glaze
