Carrot Cake Cookies

Carrot cake cookies with homemade cream cheese frosting : ) Soft, so flavorful and not overly sweet.

I added a small amount of chopped walnuts to the dough. Perfect amount of sugar & spice! The cookie is soft with a cake like texture. A new favorite + I’ll always be team carrot cake. This recipe is a keeper! 🧡😃🥕

Ingredients

For the Cookies:

  • 1 1/4 cups all-purpose flour (measured via spoon and level method)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Generous pinch of ground ginger
  • 1/2 cup unsalted butter softened to room temperature
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1 large egg room temperature preferable
  • 1 teaspoon vanilla extract
  • 1 cup finely grated carrots from about 1 large carrot*

For the Cream Cheese Frosting:

  • 4 ounces cream cheese cold
  • 1/4 cup unsalted butter softened to room temperature
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pinch salt
  • Extra grated carrots and chopped walnuts, for decoration (optional)
