Carrot cake cookies with homemade cream cheese frosting : ) Soft, so flavorful and not overly sweet.
I added a small amount of chopped walnuts to the dough. Perfect amount of sugar & spice! The cookie is soft with a cake like texture. A new favorite + I’ll always be team carrot cake. This recipe is a keeper! 🧡😃🥕

Ingredients
For the Cookies:
- 1 1/4 cups all-purpose flour (measured via spoon and level method)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Generous pinch of ground ginger
- 1/2 cup unsalted butter softened to room temperature
- 1/3 cup granulated sugar
- 1/3 cup packed brown sugar
- 1 large egg room temperature preferable
- 1 teaspoon vanilla extract
- 1 cup finely grated carrots from about 1 large carrot*
For the Cream Cheese Frosting:
- 4 ounces cream cheese cold
- 1/4 cup unsalted butter softened to room temperature
- 1 cup powdered sugar
- 1/2 teaspoon vanilla extract
- Pinch salt
- Extra grated carrots and chopped walnuts, for decoration (optional)
