Are you team asparagus? Excluding the meat & cheese, asparagus is packed with nutrients including fiber, vitamins A, C & K.
A couple of years ago, this wrapped vegetable caught my eye at a restaurant. I had to try them! They were light & delicious. I chose provolone but you can definitely substitute for another melty cheese. Top with grated Parmesan or drizzle balsamic glaze and enjoy 😋💛😃
Ingredients: 1 lb asparagus, ends cut off {first wash & dry the asparagus} 1 TBSP olive oil – provolone cheese, slice into triangles – prosciutto sliced thin
Instructions: Preheat your oven 425. Lightly drizzle olive oil over the asparagus. Divide the asparagus into bundles. Place a piece of provolone on top of the asparagus, wrap the bundle in a slice of prosciutto. Repeat the process for each bundle. Place onto a baking sheet. Bake for 10-15 mins.
