Peach Cobbler Popsicle

Frozen dessert on a stick! Caramelized peaches, brown sugar, a pinch of nutmeg & cinnamon with a coating of shortbread cookie crumble : )

Inspired by Unique Sweets, Frozen Sweet Pops. No water — just juicy peaches baked with a few simple spices. The baking aroma… so good! Their recipe is unavailable but I felt confident as I’ve made cobblers in the past. The end result is a frozen sweet treat ~ perfect for hot summer days + they taste amazing! Inspired by Suck It, Frozen Sweet Pops

Ingredients: 6 ripe peaches, cut into small pieces – 1 TSP granulated sugar – 2 TBSP brown sugar – 1/2 TSP ground nutmeg- 1/2 TSP cinnamon- splash of fresh lemon juice – pinch of salt – 6 shortbread cookies, crushed crumble

Instructions: Add peaches to a 9×9 baking dish. Coat & stir the brown sugar, granulated sugar, nutmeg, cinnamon & a pinch of salt into the the peaches. Splash of fresh lemon juice. Bake 350 for 30 mins. Peaches should be soft. Stir & Allow to cool. Spoon mixture into the popsicle mold {I made 5 popsicles}. Freeze overnight. To remove from the mold, allow popsicles to sit at room temperature for 5 mins. Crumble shortbread cookies onto a plate. Mix 1 TSP brown sugar, pinch of nutmeg & cinnamon sugar into crumbled shortbread cookies. Stir ingredients together & coat popsicles with crumble. Enjoy!
