These French pastries are so buttery & light. I made cream puffs once …decades ago 🤫and felt intimidated. Re-visiting these adorable desserts with minimal anxiety + a fun summery twist! I highly recommend making the raspberry whipped cream {even if you don’t bake} ~ it’s beyond delicious!! I made extra because it’s so darn good 💃

FOR THE PATE CHOUX
- 1 cup water
- 1/2 cup (1 stick) unsalted butter, cut into cubes
- scant 1/2 teaspoon salt
- 1 1/4 cups all-purpose flour
- 4 large eggs
FOR THE CREAM
- 1 1/2 cups heavy cream
- 3 tablespoons powdered sugar
- 1 teaspoon pure vanilla extract
- 1 1/2 cups fresh raspberries
- 2 tablespoons granulated sugar
- 1 tablespoon rose water
FOR THE CHOCOLATE GANACHE
- 4 ounces dark chocolate, coarsely chopped
- 1/2 cup heavy cream
- pinch of salt

I love making cream puffs!!! I have filled them with a white cream and chocolate but never raspberry. It sounds amazing!
