Strawberrylicious! Fresh strawberries, whipped cream filling and strawberry buttercream frosting : )

Strawberries pops up on my blog frequently! Layers of scrumptious strawberry flavor ~ it’s delicious, sweet & strawberrylicious. This recipe requires prep time however, it will not disappoint you.

Ingredients

FOR THE STRAWBERRY CAKE

  • 1 1/2 cups (350 g) granulated sugar
  • 1 cup (226 g) unsalted butter room temperature
  • 1/3 cup (72.6 g) vegetable or canola oil
  • 4 eggs
  • 3 egg whites
  • 1 tsp (4.2 g) vanilla
  • 2 tsp (4 g) baking powder
  • 2 1/2 cups (287.5 g) cake flour
  • 2 oz freeze dried strawberries measured and then pulverized into a powder
  • 1/2 tsp (2.8 g) salt
  • 1 cup (232 g) strawberry puree reductionabout 3 cups chopped strawberries, pureed and simmered over the stove to thicken and reduce to 1 cup

WHIPPED CREAM FILLING

  • 2 cups ( 462 g) heavy cream cold divided
  • 3 tablespoons (44.3 g) cold water
  • 1 tablespoon (9.25 g) unflavored gelatin
  • 1/2 cup (62.5 g) powdered sugar
  • 1 teaspoon (4.2 g) vanilla extract `
  • Fresh strawberries

FOR THE STRAWBERRY BUTTERCREAM

  • 2 cups (452 g) unsalted butter slightly chilled
  • 4 cups (500 g) powdered sugar measured and then sifted
  • 1/4 cup (40 g) freeze dried strawberries pulverized and then measured
  • 1/3 cup (76 g) heavy whipping cream
  • 2 tbsp. strawberry jam
  • 1 teaspoon (4.2 g) pure vanilla extract
  • *This buttercream recipe makes enough to fill and cover your cake. If you want to add additional piping, you’ll want to make an extra 1/2 batch.

Peach Cobbler Popsicle

Frozen dessert on a stick! Caramelized peaches, brown sugar, a pinch of nutmeg & cinnamon with a coating of shortbread cookie crumble : )

Inspired by Unique Sweets, Frozen Sweet Pops. No water — just juicy peaches baked with a few simple spices. The baking aroma… so good! Their recipe is unavailable but I felt confident as I’ve made cobblers in the past. The end result is a frozen sweet treat ~ perfect for hot summer days + they taste amazing! Inspired by Suck It, Frozen Sweet Pops

Ingredients: 6 ripe peaches, cut into small pieces – 1 TSP granulated sugar – 2 TBSP brown sugar – 1/2 TSP ground nutmeg- 1/2 TSP cinnamon- splash of fresh lemon juice – pinch of salt – 6 shortbread cookies, crushed crumble

Instructions: Add peaches to a 9×9 baking dish. Coat & stir the brown sugar, granulated sugar, nutmeg, cinnamon & a pinch of salt into the the peaches. Splash of fresh lemon juice. Bake 350 for 30 mins. Peaches should be soft. Stir & Allow to cool. Spoon mixture into the popsicle mold {I made 5 popsicles}. Freeze overnight. To remove from the mold, allow popsicles to sit at room temperature for 5 mins. Crumble shortbread cookies onto a plate. Mix 1 TSP brown sugar, pinch of nutmeg & cinnamon sugar into crumbled shortbread cookies. Stir ingredients together & coat popsicles with crumble. Enjoy!

Blueberry-Pecan Pancake Casserole

Sliced & stacked! Homemade pancakes bursting with blueberries & pecans ~ it’s so scrumptious!

Grilled Mexican Street Corn

Chillin’ and grilling… mouthwatering Mexican Street corn {aka elote}. The combination of the sweet corn with a creamy, cheesy spicy mixture is so tasty : )

Four years ago, I experienced this delicious side at a restaurant and ordered another to go. It was that good! Perfect for a snack or side and so easy to make. πŸ˜ƒπŸ’šπŸŒ½ #streetcorn #staysafe

Between you and I ….it took me awhile to perfect tender “grilled” corn without completely charring. Peel back the corn husks, remove the silk and close the husk back over the corn. Wrap tightly in foil and grill for 30 minutes at 350-400 degrees.

Easy Crab Cakes

Everyone has their version of the best crab cake. Crab should always be the star! Seasoning is great but I keep it simple. The best crab cake I ever ate… was in Maryland! It was truly the best — wish I lived there “the best”. Where is the best crab cake you ever had?

Inspired by my Mom, she loves chocolate chip cookies {well…it might be tied with Oreos}. She was diagnosed with dementia 20 years ago then progressively worse to advanced Alzheimer’s. Due to the pandemic, her residence is not allowing visitors. Once restrictions are lifted, I am visiting her with a big hug & a batch of these cookies!

Back to the cookie — If you’re new to brown butter recipes, it’s not difficult just be sure to carefully watch {and stir} the brown butter to avoid burning. Your loved ones will thank you ~ they’re that good & hard to resist!

Cheesy Breakfast Quesadilla

An egg-cellent way to start your morning! Breakfast quesadillas ~ eggs, melted cheese & a soft tortilla. It’s so darn good : )

The breakfast taco/quesadilla is super easy & quick. I used cheddar cheese with crumbled bacon & a side of fruit. Add your choice of favorites — guacamole, salsa, bacon or chorizo. Ingredients: 1 flour tortilla- 1 to 2 large eggs – salt & pepper to taste – 1 TBSP butter – 3 TBSP shredded cheese of your choice

Directions: Beat egg, season with salt and pepper. Heat skillet on medium heat. Melt the butter. Add the egg and lightly swirl it around the skillet until it forms a round shape. Allow the egg to slightly cook around the edges. While center of the egg is still wet, lay a tortilla on top of the egg. Lightly release the eggs from the edges of the pan. Once the egg edges are set, flip the egg and tortilla together so the tortilla lays down on the pan. Sprinkle cheese on top of the egg. Allow to cook for 1 minute or less. Fold the tortilla over and continue cooking both sides of the tortilla on the pan until it’s slightly golden brown. Serve warm with hot sauce, guacamole or salsa. Enjoy!
